As ancient as the rocks of Sardinia, where for thousands of years it rooted to draw power and structure, the Cannonau of Sardinia is the autochthonous wine, from red berried grapes, symbol of the enology of the island.
Perhaps the most ancestral vine of the Mediterranean basin, that has found its expression of excellence in this land.
It goes perfectly well with meats and dishes of "structure".
Vinification
It takes place with a cold fermentation maceration at 24 ° -26 ° C. With delestagé and repeated pumping over, a good extraction of the aromatic and coloring components is ensured. This is followed by 6 months of aging in steel at a controlled temperature.
Tasting notes
Ruby red color, bright and intense with violet reflections. Delicate aromas ranging from violet, rose to wild berries. In the mouth soft, savory and complex, well integrated tannins that accompany the wine in a persistent finish.
